French Dressings or Basic Vinaigrette
Serves four
2 Tbsp vinegar
¼ Tsp freshly ground pepper
½ Cup olive oil or vegetable oil
½ Tsp salt
In a small bowl mix the vinegar and salt. Add the pepper and slowly whisk in the oil. Stir to blend before using, or store in a jar with a tight lid and shake well before using.
Mustard French dressing
Add 1- 2 teaspoon Dijon mustard in basic vinaigrette and Blend well.
Garlic French dressing
Add ½ - 1 tablespoon minced garlic.
Herbs French dressing
Add 2 teaspoon fresh herbs, such as basil, chervil, or tarragon.
Curry French dressing
Add 1 teaspoon curry powder in basic vinaigrette and blend well.
Cream French dressing
Add 3 tablespoon heavy cream or sour cream in basic vinaigrette and mix well.
Fruit salad French dressing
Use lemon juice instead of vinegar and 1/3 cup honey. Blend well.
Chiffonade French dressing
Add one tablespoon heavy cream, 1 table spoon currant jelly, and ¼ teaspoon grated lemon rind. Adjust seasoning and mix well.
1 cup mayonnaise
1 cup sour cream
½ cup honey
Lime dressing (1/3 cup)
For fruit salad
¼ cup vegetable oil
2 tablespoon lime juice
¼ teaspoon Tabasco
2 teaspoon sugar
¼ teaspoon freshly ground pepper
Salt to taste
Combine all ingredients in a jar with fitting lid. Shake until blended.
Lime dressing(1 ¾ cup)
I have reworked this and it’s better than ever.
½ cup red chili sauce
¼ cup catsup
½ tablespoon tarragon vinegar
½ teaspoon chopped fresh or dried tarragon
½ teaspoon minced parsley
In a bowl, put the mayonnaise, red chili sauce, catsup, vinegar, tarragon, and parsley and mix well until smooth. Store covered in the refrigerator until needed.
Nut dressing (½ cup)
For fruit salad
5 walnut
10 almonds
¼ teaspoon paprika
½ teaspoon catsup
¼ teaspoon sugar
1 tablespoon lemon juice
1/3 cup vegetable oil
Salt to taste
Grind all nuts. add paprika, catsup, sugar, and vinegar. Blend, slowly add the oil, then salt to taste.
Yogurt dressing (1 ¼ cup)
For fruit salad
1 cup yogurt
2 tablespoon white wine vinegar
1 ½ tablespoon lemon juice
2 tablespoon finely chopped chives
2 tablespoon finely chopped parsley
Salt and pepper to taste
Combine all ingredients in a bowl and blend until mixed well. Refrigerate and use as needed.
Honey yogurt dressing – add two tablespoon honey and omit the chives and parsley.
Yogurt and mayonnaise dressing – add up to 1 cup mayonnaise and mix well.
Sour cream dressing (1 ¼ cups)
For fruit salad and vegetable salad
¼ cup vinegar
1 teaspoon sugar
Salt and pepper to taste
Combine all ingredients in a bowl and whisk until well blend.
Lemon soy dressing (1 cup)
2 tablespoons soy sauce
1/3 cup fresh lemon juice
¼ cup vegetable oil
¼ cup water
Mix together or shake in a bottle all ingredients.
Pineapple honey dressing (3/4 cup)
For fruit salad
3 tablespoon crushed pineapple
¼ cup lemon juice
Salt
Put the honey, lemon juice, and pineapple in a blender or food processor and process about 15 seconds or until well blended. Add salt to taste.
