Quzar E Pukhtan
Cottage cheese cubes in spicy tomato puree.
It’s another version of shahi paneer. Originated in india by a Turkish chef.
Serves – 4
1 lbs Cottage cheese
½ lb chopped tomato
1 tsp black cumin seed
4 oz butter
½ tsp cardamom powder
1 tsp coriander powder
2 tsp coriander leaves
chopped
1 tsp gram masala
1 ½ garlic paste
1 ½ ginger paste
1 pinch mace powder
4 oz processed cheese,
grated
2 tsp red chilli powder (Kashmiri
mirch)

Method
Put the tomatoes in a pan
with very little water and cook till they are well mashed.
Add salt, red chilli,
ginger and garlic paste.
Cook for 10 minutes then remove from the fire, cool
and push through a strainer.
Melt butter in a pan and
Sauté paneer.
Add black cumin and after it
crackles add the tomato extract over the paneer.
Sprinkle the garam masala,
coriander powder and mace powder.
Add grated processed
cheese. Bring to boil and simmer for 5
minutes on a slow fire.
Garnish with chopped
coriander and cardamom powder and cream.
Serve with naan.
